We’re embracing the cold full-force and searching for winter recipes when we thought, why not make up our own! Here’s a simple stew recipe to try this fall:
The ingredients are all healthy, fresh, and local! Plus, this stew is super filling and the spices warm you up when it’s cold out.
Middle Eastern Kale Lentil Stew (Gluten-free and Vegan )
Here’s what you’ll need:
- 1 cup rice
- 1 400g can of lentils
- 1 400g can of tomatoes
- 1 cube of stock
- 2 cups water
- 4 cloves of garlic, diced
- 1 onion, diced
- a handful of basil, finely chopped
- a few stalks of kale, finely chopped
- 1 tablespoon smoked paprika
- 1 teaspoon cumin
- 1 wedge of lemon
- salt and pepper
The cooking process for this is so easy – dump everything into a saucepan and simmer for 20 minutes! Depending on the rice you choose you use, you may need to adjust for less or more time. I had to add more water to cook the rice through, make sure your stew doesn’t simmer down too much. Other than that, it’s a foolproof recipe. You can even add more things to it, like other beans, spices like anise or nutmeg, fennel, hot peppers, or swap rice for potatoes and cauliflower for a more Indian influence!
